No... A laminitic horse will not want to move around much, and he
might stand in the classic stance of front feet camped out in front,
and if it's approaching really bad he'll have elevated digital
pulses. There won't be any blood upon trimming; the farrier works FAR
away from anything that would bleed. In severe cases the coffin bone
will penetrate the bottom of the foot, but there still isn't much
blood when that happens, although it is definitely obvious. They
often lay down a lot; it's not like arthritic lamenesses where they
might be afraid to lay down due to how hard it is to get back up -
with laminitis, a lot mainly prefer to be off their feet and are not
worried about getting back up.
You mentioned 5 hours on grass for a horse who's not usually on grass
- yes, that can absolutely give him laminitis. And colic. Check

If he's got laminitis now or if he's laminitis prone, a little bit of
grass in a paddock is a big no-no. Grass that is stressed, such as
grass that's trying to grow where it's not encouraged to grow and
therefore not watered and fertilyzed, is often way higher in
nonstructural carbs, the carbs that cause laminitis.
